Ginger Citrus Muffins

If you’re unfamiliar with Green Mandarin, it is harvested from the unripe fruit of the mandarin tree. It is known for supporting healthy digestive and immune systems when used internally. What I love is it’s a GREAT Citrus Oil to incorporate into your cooking and baking!

Sourcing and Harvesting of Green Mandarin
One of the things I really love about dōTERRA is how we partner with small scale farmers across the globe. Our Green Mandarin oil is sustainably sourced in Brazil from a network of Brazilian citrus farmers. Since Green Mandarin is the unripened fruit of the mandarin tree, they harvest it early which covers their farming costs for the year. Later, the ripened red mandarin fruit will be picked mostly for profit. This method of harvesting creates a sustainable, steady income throughout the year for the Brazilian small and large scale growers. It also reduces green waste and yields two beautiful essential oils with unique chemistry.
Mandarin trees need to be thinned while the fruit is still young and unripe. Approximately 60-70 percent of the green, tart inedible fruit is removed from the tree during this thinning process. In the past, this unripe fruit was discarded or left on the ground to decompose. But dōTERRA has a philosophy of waste not, so they figured out a way to make the most of the unripened fruit. Though young, the unripened fruit has a unique essential oil with a wide range of benefits. The cold-pressed green rinds yield a fragrant, uplifting oil distinct from that of fully ripened mandarins (which is known as Red Mandarin essential oil). This essential oil is power packed with a proportionally higher concentration of gamma-Terpinene and a lower concentration of limonene than the other citrus oils. Taken internally it supports digestive health and immune health. It’s a phenomenal essential oil to incorporate into baked goods!
This recipe for Ginger Citrus Muffins is so simple and quick to make. All you need is a medium sized mixing bowl and the ingredients.
I usually measure out my ingredients ahead of time. I recently learned there’s a name for preparing ahead of time…
“Mise en place (MEEZ ahn plahs) is a French term for having all your ingredients measured, cut, peeled, sliced, grated, etc. before you start cooking. Pans are prepared.”
I thought it was just called trying to save time and be organized (HaHa!), but I’m happy to hear it’s a fancy French term!
Also, when making quick breads, I usually do not use an electric mixer. I love a tender quick bread which is made by gently mixing the ingredients just until moist. Over mixing can cause a tough, chewy result. That being said, I’m so cautious not to over mix muffins, pancakes, scones, etc.
To ensure the essential oils are incorporated, I add them to another liquid. I chose to add them to the oil because adding a citrus to milk can cause the milk to curdle.
I’m thrilled with the way these turned out. They are not overly sweet and will go so well with a cup of coffee!

Ginger Citrus Muffins
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 3/4 cup milk
- 1/3 cup sunflower oil
- 1 egg, lightly beaten
- 3 drops green mandarin essential oil
- 3 drops wild orange essential oil
- 2 tbsp crystallized ginger, finely chopped
- Preheat oven to 400°F. Line a muffin tin with 12 baking cups.
- In a large bowl, combine the dry ingredients (flour, sugar, baking powder, salt.) Add crystallized ginger and toss to coat.
- Lightly beat egg and add to milk. Add the 3 drops each or wild orange and green mandarin essential oils to sunflower oil. Stir to incorporate. Add to milk mixture.
- Add liquid ingredients to dry ingredients all at once, and mix with a fork until moist. Be careful not to overmix. A few lumps are okay.
- Spoon batter into the baking cups. Fill to about 2/3 full.
- Bake in the oven for 15-20 minutes or until tops are golden and a toothpick inserted in the center of muffin comes out clean.
- Allow to cool for a few minutes before serving.
- Serve with room temperature butter.
